A cucumber kingdom!

So I have 10 cukes (all named Larry!) and more are on the way - HELP! We don't like cuke salad or pickles. Aside from giving them away to the neighbors, is there any way to freeze/store them and make them last longer? Basically we eat them raw and we can't eat them fast enough. I HATE throwing away produce, not to mention produce I paid for in the CSA box. Any ideas??
PS - and this blog is not dead. It suffers from narcolepsy. Your patience will be rewarded w/a slew of posts once our regular school routine starts. Thank you!

Someone in our work newsletter was wanting to buy some (? why dont they go to the store, I have no idea) I can give you their number.

Otherwise, Andrei eats 2 every day! I haven't eaten any this year yet!

I'm so proud of you guys for having a CSA box!! We tried to get on one this year, but applied too late - they were all sold out. I'd be interested in knowing what farm you guys partner with and how it is going.

Jason S? I say that b/c I think I talked to Jason R about this already, but either way...we're get our box from Springdale Farm. You can visit their website at springdalefarmcsa.org. We've really enjoyed it! I'll write a post about it soon...

If you peel, then cut the cukes lengthwise in thin long pieces they make great "chips" for dipping in homemade humus (garbanzo dip) which if you have a magic bullet blender is so easy to make you will never buy another over priced, unsustainable little plastic container of it again from the store. You can use other dips too like seed cheese etc. I am not a big fan of cukes but I like them like this. The skin and the soft seed center ends up in the compost and I think that makes them easier to digest and less, uh, you know, gassy.

mel: it seems like simple math to me. 10 cukes - (7 days x 1 smoothie per day) = 3 remaining cukes. Just don't add much water to the smoothie. They should supply enough.

greencat: I'd be interested in your procedure for making seed cheeze. I tried it once with sunflower seed pulp, but was unimpressed with the results.
